Oh I just love brownies and love adding different goodies in them. This time it was peanut butter. You really can’t go wrong with a peanut butter and chocolate combination. This is an easy way to elevate normal brownies to make them to a really special treat.
C H O C O L A T E P E A N U T B U T T E R B R O W N I E S
1/4 cup butter (melted)
1 cup sugar
1 egg
1 1/4 cup Sweet Mercy Chocolate Baking Mix
1/4 to 1/3 cup water
1/4 cup semi sweet chocolate chips
1/4 cup peanut butter
Optional:
Reese’s cups minis
Whipping cream or ice cream
Peanut butter chocolate hot fudge (recipe below)
Preheat oven to 350 degrees. Grease an 8 x 8 pan. Mix all of the ingredients (except for the chocolate chips and peanut butter) in a medium sized bowl. Fold in chocolate chips. Pour in to prepared pan. Drop spoonfuls of peanut butter on top of the brownies. Use a knife and run it through the brownies back and forth about 4 times to mix the peanut butter in the brownies. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
I topped the brownies with homemade heavy whipping cream that I put in the freezer so that it was more like an ice cream consistency. I also added some Reese’s cups minis.

1 cup heavy whipping cream
4 ounces semi-sweet chocolate, coarsly chopped
1/4 cup peanut butter
1 cup powdered sugar
1/2 tsp. vanilla
pinch salt
In a medium sauce pan heat the cream over medium heat until it starts to boil. Remove from heat and add the chocolate and peanut butter. Whisk together until the mixture is smooth. Add powdered sugar, vanilla and salt, mixing after each addition. Let mixture cool for about 10 minutes before serving. Store extra in the refrigerator
