My family loves tacos. It’s great because you can have so many different toppings that cater to picky kids, my six year old decided that he’s vegan and my eight year old loves black beans on everything. We traditionally don’t eat a lot of meat so I am always looking for vegetarian recipes. And these fajitas are so yummy!

Ingredients:
Olive oil
Bell peppers sliced
Yellow Onion thinly sliced
Can of black beans (rinsed and drained) and heated
Flour or corn tortillas
Avocado
Pico de gallo salsa
Shredded lettuce
Limes
Cilantro
In a skillet heat the olive oil on medium heat. Add the onions and peppers and saute over medium-high heat for about 10 minutes or until vegetables are softened. Grill your tortilla shells in your oven on low broil or an outdoor grill on low until browned. Top tortillas with sautéed veggies, black beans, salsa, sliced avocado, shredded lettuce, cilantro and fresh squeezed lime.
