I really wanted to try making a marshmallow buttercream frosting because I had some leftover marshmallow from the s’more donuts I made. Also, we have a little stockpile of Girl Scout cookies, so I wanted to incorporate those some how. I ended up with these yummy chocolate cupcakes. For the cupcakes I used this box mix. I have used it before and just think it’s so delicious. For the frosting I used this recipe but I did not add the vanilla bean. And in addition I added about 2 teaspoons of milk. I think adding a little heavy cream to the frosting would make it even better. Then I just sprinkled on some crushed up Thin mint cookies. Oh so yummy! Add a little green and they’re perfect for St. Patrick’s day 🙂
