CAPRESE TORTELLINI

We recently planted our garden and I can’t wait until our tomatoes grow so that I can make all of my favorite caprese dishes. I have plenty of basil. I also want to make some mozzarella cheese-which will be a new experience, but we love fresh mozzarella around here! I could eat caprese pizza,

caprese baguette

sandwiches and this pasta everyday!

Caprese Tortellini

1 Package tortellini (I always find mine in the refrigerated section at the grocery store)

Fresh mozzarella pearls

Fresh basil, chopped

Tomatoes, chopped

Balsamic vinegar dressing (see below)

1. Cook the tortellini as the package directs. Drain it, take it off the heat and toss in the basil, tomatoes, mozzarella and stir in some of the balsamic vinegar dressing. How much tortellini you cook, will determine how much tomato, basil, mozzarella and dressing you need. Add it all to taste. You can serve this warm or cold. 

Balsamic Vinegar Dressing Recipe:

1/4 cup balsamic vinegar

2 teaspoons dark brown sugar

1 tablespoon chopped garlic

1/2 teaspoon salt

1/2 teaspoon pepper

3/4 cup olive oil

1. Put all of the ingredients in a tupperware bowl or other container with a tight lid then shake like crazy to combine.
