I love making this lemon ice during the summer. It’s a great lower calorie alternative to ice cream. I love the lemon, but sometimes also add crushed strawberries to it to make a strawberry lemon ice. It’s so easy to make!
L E M O N I C E R E C I P E
Ingredients:
3 cups of water
1 cup sugar
zest of 1 lemon
1/2 cup fresh lemon juice I usually can get a half a cup with 2 or 3 lemons
Directions:
Boil the water and the sugar. In the meantime mix the zest with the lemon juice. After the sugar water reaches a boil, remove from heat and combine the lemon juice with the sugar water in a shallow pan. I use a round cake pan. Let the mixture cool a little bit before putting in your freezer-if it’s too hot it can warm up your freezer and throw it off-speaking from experience here…. Stir the mixture every half hour for a few hours. This part is crucial because if you forget to stir it, it will just be one huge lemon flavored ice cube. This isn’t hard work but it’s something that you have to do several times.
