Oh these little ice cream bites are my new favorite treat. They were pretty quick and easy too. I just mixed some vanilla Haagen dazs ice cream with fresh raspberries and some chocolate ice cream with mini peanut butter cups. Scoop the ice cream in to a mold, I got mine from Wholeport. It helped to have the ice cream melted a little bit. Then I crushed up oreos and added some melted caramel to it. And pressed the cookie mixture on the top. I just threw them in the freezer for a few hours. The silicone mold is so easy to just pop the ice cream bites out.
