Although I hate to see summer go, I think the only thing that makes it worth it is that fall is here. I love pulling out my “fall” recipes. Many of them include pumpkin. For these little pumpkin chocolate chip cupcake bites I followed this recipe. I made just a few modifications, I added a little graham cracker crust to the bottom of the cupcake pan, then poured in the cupcake batter and then baked as directed. When they cooled I topped them off with some homemade cream cheese whipped frosting. They are a fun little fall treat.
