pumpkin chocolate chip cookies + toasted pumpkin seeds

Every year I make pumpkin chocolate chip cookies… because I love pumpkin… and I love chocolate. I got this recipe from cooks.com
Pumpkin Chocolate Chip Cookies
1 c. pumpkin
3/4 c. sugar
1/2 c. oil
1 egg
2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
1 tsp. milk
1 c. chocolate chips
1 tsp. vanilla
Dissolve baking soda in milk; set aside. In large bowl add pumpkin, sugar, oil, and egg; stir until combined. Add flour, baking powder, cinnamon, salt and baking soda mixture. Mix well. Stir in chocolate chips and vanilla. Spoon onto cookie sheet. Bake at 375 degrees 10 to 12 minutes or until done. 

Now to the pumpkin seeds…
We carved pumpkins the other day so I whipped up some toasted seeds.

Ok, ok I know these pumpkin seeds look like they have been burnt to a crisp, but they weren’t. I cleaned and dried the seeds, tossed them in EVOO and then tossed them in cinnamon sugar. I cooked them in the oven at 400 degrees for about 15 minutes. Then I tossed them in a little cocoa powder. The cocoa powder makes them look burnt, but I think they were pretty good.
