SHORTBREAD COOKIES

Recently I saw these shortbread cookies made with beet frosting and I thought they looked cool so I decided to make some like it. I decided to skip the beets and go with a raspberry, orange and lime glaze instead. I had never made shortbread cookies before and they were really easy and pretty good too.

Shortbread Cookies:

3 sticks of unsalted butter at room temperature
1 cup of sugar
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon salt
Preheat the oven to 350 degrees F.
In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and sugar until they are just combined. Add the vanilla. In a separate bowl, sift together the flour and salt, then add them to the butter and sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
Roll the dough 1/2-inch thick and cut with a cookie cutter. Place the cookies on an ungreased baking sheet and bake for 20-25 minutes, until the edges begin to brown. Allow to cool to room temperature.
When they cool, dip the cookies in to the desired frosting or glaze.
Raspberry Glaze:
1 cup of raspberries
1 1/2 cups powdered sugar, sifted
Place the raspberries in a small saucepan on medium low and mash with the back of a fork as they simmer. After doing this for about 5-8 minutes, strain the raspberries in to a small bowl. Discard the seeds and combine the sifted powered sugar with the strained raspberry juice. You may need to add more powered sugar if you would like the glaze to be thicker. 
Orange Glaze:
2 tablespoons orange juice
1 1/2 cups powdered sugar, sifted
orange zest
In a small bowl, combine the orange juice, sifted powdered sugar and orange zest. You may need to add more or less of each ingredient depending on how thick you would like the glaze.
Lime Glaze:
2 tablespoons lime juice
1 1/2 cups powdered sugar, sifted
lime zest
In a small bowl, combine the lime juice, sifted powdered sugar and lime zest. You may need to add more or less of each ingredient depending on how thick you would like the glaze.
