When I went to Las Vegas to spend time with my sister and her husband and her new little baby, they made this taco salad and I have made it so many times since. To make it, I used spinach, chopped green peppers, chopped yellow peppers, fresh cilantro, diced tomatoes, black refried beans with cheese in it, crushed tortilla chips and some jalapeño ranch salad dressing. So yummy!
