While on Whole 30, we tried a lot of different recipes. It was exciting for me to try new things each week. It took a lot of planning and prepping because some of the ingredients were new to me. There were some definite winners and losers. These are some that I plan to make again even though we are done with Whole 30. I may just substitute black beans instead of the meat in some of these or just skip the meat all together-I need a break from all the meat 🙂 {Excuse the picture quality, these were snapped with my phone}
We made kabobs a few times. Some of my favorite things to grill up on the kabob were peppers, onions, potatoes, pineapple and steak. I marinated them in coconut aminos. I also loved making homemade applesauce just by peeling and coring the apples, putting them in the microwave for a few minutes and sprinkling with cinnamon.
Spaghetti squash and spaghetti meat sauce. Meat sauce recipe here. I made a few changes to the recipe, I added zucchini and carrots and then put it in a squash. I just put the squash in the microwave for about 10 minutes and made sure to remove all the seeds. It was so good.
Chocolate covered strawberries with macadamia nuts. Okay, okay maybe this goes against the Whole 30 mantra because it’s a treat but it’s Whole 30 compliant, it’s just strawberries dipped in melted 100% cocoa with crushed macadamia nuts sprinkled on top.
Crockpot Carnitas with Pineapple Avacado SalsaCrockpot Pineapple Pulled Pork I added a shredded lettuce, carrot and pineapple slaw on top.
We ate burgers a lot with lettuce buns. My favorite I loved adding grilled pineapple and guacamole on top. I also loved cooking carrots, just drizzle with EVOO and salt and bake at 400 degrees for about 20 minutes.
Buffalo Ranch Chicken Stuffed Peppers with Guacamole
Now some of these recipes I would tweak a little to make them Whole 30 compliant, but it was easy to do and they still tasted great!
