HOLIDAY LEFTOVERS

Are you a leftovers lover? Normally, I don’t like leftovers at all but for some reason I love holiday dinner leftovers. My new favorite thing to do with holiday leftovers is make pot pies out of them. Just buy some pie crust or make it early, so as soon as you clear the table, put some pie crust in oversized muffin tins (or normal muffin tins for smaller pies) and load all the leftovers in. I cover with some remaining pie crust, cover the pan with tinfoil and stick it in the freezer. I also spray the muffin tins with cooking spray before putting the pie crust in just to be sure they can come out easy. Then whenever you’re in the mood for a holiday dinner, pull them out of the freezer and cook them at 375 degrees for about an hour. I also always freeze leftover pie and cranberry sauce so we can have the full holiday meal experience 🙂IMG_1997IMG_2003These pot pies had turkey, green beans, mashed potatoes, sweet potatoes and gravy inside. So good!
