SWEET + SAVORY MINI PANCAKES

IMG_7028IMG_7034IMG_7036IMG_7050I found these little mini pancakes one day while perusing the frozen breakfast section. They are so yummy and my kids love how small they are. So I decided to turn them in to a little brunch appetizer. I love brunch and this is the perfect little treat to make that looks pretty and tastes delicious. Because the pancakes are already made-it’s so quick to make. You can either cook them in a frying pan with a little butter in the pan or in the microwave. IMG_7019Next, cover them with powdered sugar.

Then top them with whatever you’d like. I chose to make a cherry whipped cream with a cherry on top, Nutella with a raspberry on top and a maple whipped cream with bacon on top. Really the options are endless-I mean it’s on a pancake so anything will taste good 🙂

S W E E T  +  S A V O R Y  M I N I  P A N C A K E S


1 package of mini pancakes or simply make your own itty bitty ones
1 pint heavy whipping cream
4-5 tablespoons powdered sugar
2 tablespoons maple syrup
1 can pitted dark cherries
1/2 cup Nutella
raspberries for garnish
cooked bacon for garnish

T O   M A K E :Cook the mini pancakes as directed. Sprinkle with about 2 tsp of powered sugar. Set aside. Make your whipping cream by whipping your whipped cream on high until soft peaks form. Add 4-5 tablespoons of powered sugar, depending on how sweet you like it. Whip until sugar mixes in. Separate the whipped cream in to two bowls. In one bowl, add some drained, chopped, pitted dark cherries. Mix until stiff peaks form. For the other bowl of whipped cream, add two tablespoons of maple syrup-or more if you like it sweeter. Whip until stiff peaks form. I then used a piping bag to pipe on both whipped creams and also the Nutella. Garnish with some leftover chopped dark cherries, raspberries and cooked bacon.
