Pumpkin Seed Salsa Tacos

When I was in Michigan over the summer I stopped in one of my favorite places, American Spoon and had some of their Pumpkin Seed Salsa Tacos. Since I live too far away to eat them as much as I would want, I have stocked up on the pumpkin seed salsa and have created my own version.

The reason I love this salsa is that it makes normal tacos seem a little bit more gourmet. Especially this time of year, adding some pumpkin salsa to your tacos will not disappoint 🙂

P U M P K I N   S E E D   S A L S A   T A C O S


Pulled Pork:
3 lbs pork loin
1 jar pumpkin seed salsa

Directions:
In a crock pot, cook your pulled pork. I usually add some large sliced onions and a little bit of chicken stock and let it cook 6-8 hours. When the pork is cooked, shred it, remove the onions. Put it back in the crock pot and add in the jar of salsa. Cook on low for another half hour.

Salad Topping:
1/2 cup chopped cilantro
1 cup shredded cabbage
1 1/2 cup shredded lettuce
4-5 diced radishes

Directions:
Combine all salad ingredients in a bowl

Taco Toppings:
Crumbled queso fresco
Sliced avocado
Sliced lime
Flour or corn tortillas

Top each taco with pulled pork, salad mixture, queso fresco, sliced avocado, fresh lime juice, enjoy!
