Chocolate Chip Cookie Ice Cream Sandwiches

I love making ice cream treats during the summer. Recently I made these rollout chocolate chip cookies and I thought they would make the perfect ice cream sandwich cookie. Now, when you are making any dessert with ice cream, it’s tricky because that melting ice cream is a ticking time bomb for you haha! Luckily, you can freeze these when you are done and keep them in the freezer until you are ready to serve them.

Mix the cookie dough and wrap in plastic wrap and chill in the refrigerator for about an hour.

Roll out your dough on a floured surface. Cut with a circle cookie cutter and bake.

For the ice cream middle, spoon some ice cream on to parchment paper. Cover with parchment paper and roll out until flat. Put back in the freezer for about an hour. Form your ice cream disks by cutting out the ice cream with a circle cookie cutter.

I N G R E D I E N T S :

1 cup (two sticks) unsalted butter softened
1/3 cup granulated sugar
1/2 cup brown sugar
1 large egg yolk (room temperature, or run under warm water to warm up)
2 teaspoon vanilla extract
2 cups flour
3/4 teaspoon kosher salt
1 1/2 cups mini chocolate chips

D I R E C T I O N S :

Preheat oven to 350.
With a mixer, cream the sugars and the butter in a large bowl. Mix in the egg and vanilla. Add in the flour and salt. Mix until fully combined. You may think there’s too much flour but just keep mixing until you have a normal cookie batter consistency. Mix in your chocolate chips.

Form the dough in to two flat discs and wrap in plastic wrap. Chill in the refrigerator for about an hour.

Roll out the dough on a floured surface with a rolling pin. I rolled it to about 1/4 inch thick. Then using a circle cookie cutter, cut out your cookies. Cook on a parchment lined baking sheet for 12 minutes. You don’t want the cookies to brown.

While the cookies are cooking/cooling, prepare your ice cream disks. Roll out some ice cream between two pieces of parchment paper. Put in the freezer until the ice cream is very frozen again. To make the disks, remove the top piece of parchment paper and using the same circle cookie cutter, cut out the ice cream disk. I needed to use a spatula to help get the ice cream off the parchment because sometimes the ice cream didn’t want to come up. Then just sandwich it between two cookies. You can roll them or dip them in melted chocolate, or chocolate chips, there are so many options. But work fast my friends, the ice cream doesn’t last too long before it starts to melt. Freeze until ready to eat.
