Patriotic Ice Cream Station

I have one more patriotic dessert to share with you before the Fourth of July. I love making ice cream and can remember when my mom would make homemade vanilla ice cream and we would top it with freshly picked strawberries. One of the things my kids and I wanted to do over the summer was to make ice cream. Even though I love chocolate ice cream, we made vanilla so that it could be a treat used on the fourth. I have an ice cream maker and use it all the time. After the ice cream was made and set in the freezer for a few hours. I scooped it in to these little cupcake liners from WholePort but these are similar. It’s the perfect little dessert station for the fourth. I love offering options since each of my kids prefer different toppings for their ice cream.

P A T R I O T I C   V A N I L L A   I C E   C R E A M


Ingredients:
1 cup 2% or whole milk
3/4 cups granulated sugar
pinch salt
2 cups heavy cream
1 TBS pure vanilla extract
strawberries (diced)
blueberries
cherries (diced and pitted)
baking cups

Directions:
Use hand mixer or whisk to combine milk, sugar and salt until the sugar is dissolved. Stir in the the heavy cream and vanilla. Cover and refrigerate for 1 to 2 hours. Pour mixture in to ice cream maker and cream for 20 minutes. At this point the ice cream will be a little soft so place it in your freezer for a few hours in an airtight container to harden up. Scoop ice cream in your cupcake liners. Top with washed, diced berries.
